Why we started

Goa has a long and revered tradition of international trade and cultural integration with a host of global communities. The result - an extremely rich and diverse culinary tradition.

Auntie Carmina's recipes

The six masalas (Cafreal, Xacuti, Ambotik, Vindaloo, Chettinad, Makhani) come from Auntie Carmina's kitchen. Tested and retested at home for the family, then written down so we could replicate them at scale without losing the texture or balance. We didn't simplify any of them to fit a quick service format. The work was to keep them honest while serving them fast.

The vision

To preserve Goan culinary traditions with honesty and integrity. Every Carmina's Curry outlet runs on the same masalas, the same supplier standards, and the same training. Whether you eat in Goa or in a future location, the bowl should taste the way it tastes in Auntie's kitchen. That's the brief. That's the promise.
